Vegan Amish Cinnamon Bread



Ingredients:

For the Batter:

  • 1 cup unsweetened applesauce
  • 2 cups sugar
  • 1/2 cup vegetable oil
  • 2 tablespoons ground flaxseeds mixed with 6 tablespoons warm water (as an egg substitute)
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

For the Cinnamon Sugar Mixture:

  • 2/3 cup sugar
  • 2 teaspoons ground cinnamon

  • I was so excited to see this, but having been a diabetic (beat it through diet) I still do not eat anything white (flour) and I do not do oil. Suggestions?
