Butternut Squash And Mushroom Risotto



Ingredients:

  • 1 cup Arborio rice
  • 2 cups butternut squash, peeled and diced
  • 1 cup mushrooms, sliced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth (approximately)
  • 1/2 cup dry white wine (optional)
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • Chopped parsley for garnish
