Cabbage Rolls



Ingredients:

For the cabbage rolls:

  • 1 large head of green cabbage
  • 1 cup cooked rice (white, brown, or any grain of your choice)
  • 1 cup cooked and drained lentils or chickpeas (or a mixture of both)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes (canned or fresh)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

For the tomato sauce:

  • 1 can (14 oz) crushed tomatoes
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
