Keto Brioche



Instructions:

  1. Activate the yeast: In a small bowl, mix the warm unsweetened almond milk with a teaspoon of granulated erythritol. Sprinkle the active dry yeast over the milk and gently stir. Let it sit for about 5-10 minutes until the yeast becomes frothy and activated.
  2. Mix the dough: In a large mixing bowl, combine the almond flour, coconut flour, and remaining granulated erythritol. Make a well in the center and add the activated yeast mixture and the three eggs. Mix everything together using a spoon until it forms a sticky dough.
  3. Knead the dough: Transfer the dough to a floured surface (you can use extra almond flour or coconut flour for dusting) and start kneading. Gradually incorporate the melted and cooled butter into the dough while kneading. Continue kneading for about 10-15 minutes or until the dough becomes smooth, elastic, and no longer sticky.
  4. First rise: Place the dough in a lightly greased bowl and cover it with a damp cloth or plastic wrap. Allow it to rise in a warm, draft-free place for about 1-2 hours, or until it doubles in size.
  5. Shape the brioche: After the dough has risen, gently punch it down to release the air. Divide the dough into equal portions and shape them into desired keto-friendly brioche shapes.
  6. Second rise: Place the shaped brioche on a baking sheet lined with parchment paper. Cover them again with a damp cloth or plastic wrap and let them rise for another 45 minutes to 1 hour, until they puff up.
  7. Preheat the oven: During the second rise, preheat your oven to 180°C (350°F).
  8. Egg wash: In a small bowl, whisk the egg yolk with a little bit of unsweetened almond milk. Gently brush this mixture on top of the risen brioche to give them a beautiful golden color when baked.
  9. Bake: Place the brioche in the preheated oven and bake for about 20-25 minutes (for smaller brioche) or 30-35 minutes (for larger brioche) until they turn golden brown on top and are fully cooked.
  10. Cool and serve: Remove the keto brioche from the oven and let them cool on a wire rack. Once cooled, you can enjoy them as a delicious low-carb treat!

Please note that the keto version of brioche will have a slightly different texture and taste due to the substitutions. It may not be as fluffy as the original version, but it’s a great low-carb alternative for those on a ketogenic diet. Enjoy!
