Slow Cooker Apricot Chicken


Instructions

  1. Prep the Chicken: Place the chicken breasts in the bottom of your slow cooker. If they are very thick, you can slice them in half lengthwise to ensure even cooking and better glaze coverage.

  2. Mix the Sauce: In a small bowl, whisk together the apricot preserves and the salad dressing. If you like a little extra depth, you can add a pinch of salt or red pepper flakes, though it isn’t strictly necessary.

  3. Combine: Pour the mixture directly over the chicken, making sure each piece is well-coated.

  4. Slow Cook: Cover and cook on Low for 4 to 6 hours or on High for 2 to 3 hours. Avoid overcooking to keep the chicken tender.

  5. Serve: Once the chicken is cooked through, give everything a gentle stir. Serve the chicken whole or shredded, spooning the extra glaze from the pot over the top.


Serving Suggestions

This dish is best served over a bed of fluffy white rice, quinoa, or even mashed potatoes to soak up that incredible sauce. A side of steamed broccoli or a crisp green salad provides a nice fresh contrast to the rich glaze.
