Vegan Blueberry Muffin



Instructions:

  1. In a jar or container, combine the rolled oats, almond milk, mashed blueberries, maple syrup, vanilla extract, and cinnamon. Stir well to combine.
  2. Cover the jar or container and refrigerate overnight (or for at least 4 hours).
  3. In the morning, give the oats a stir and add a splash more almond milk if desired. Top with chopped nuts and shredded coconut, if using.
  4. Enjoy your delicious vegan blueberry muffin overnight oats!

You can also add some chia seeds to the mixture for an extra boost of nutrients and a thicker texture.
