LOTUS ROOTS CHICKEN SOUP



Instructions:

  1. In a large pot, heat sesame oil over medium heat. Add onion, garlic, and ginger and cook until softened.
  2. Add chicken and cook until browned.
  3. Add chicken broth, soy sauce, sliced lotus roots, and sliced carrots. Bring to a boil.
  4. Reduce heat and let the soup simmer for 25-30 minutes or until vegetables and chicken are cooked through.
  5. In a small bowl, mix cornstarch with water. Gradually add to the soup while stirring.
  6. Let the soup boil until it thickens.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with chopped green onions (optional). Enjoy!
