Instructions:
- Preheat your oven to 375°F (190°C).
- In a medium bowl, mix together the chopped spinach, ricotta cheese, grated Parmesan cheese, minced garlic, salt, and black pepper until well combined.
- Using a sharp knife, make a pocket in the thickest part of each chicken breast. Be careful not to cut all the way through.
- Stuff each chicken breast with the spinach mixture, using toothpicks to hold the opening closed if necessary.
- In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the stuffed chicken breasts and cook for about 4-5 minutes on each side, until golden brown.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and no longer pink in the center.
- Remove the toothpicks before serving.
