- In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt. If you’re using nutritional yeast, garlic powder, and onion powder for added flavor, add them to the dry ingredients and mix well.
- In a separate bowl, combine the almond milk, olive oil, and apple cider vinegar. Stir well to combine. This mixture will act as your vegan “buttermilk.”
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it’s okay if there are a few lumps.
- Gently fold in the shredded vegan cheese. Reserve a small amount of cheese for topping the bread if you’d like.
- Pour the batter into the prepared loaf pan, spreading it evenly. If you reserved some cheese, sprinkle it on top.
- Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean and the top is golden brown.
- Remove the bread from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
- Once cooled, slice and serve. You can garnish with chopped fresh herbs if desired.
